Up here in the northwest we're deep into a beautiful Indian Summer! The
lake still
shimmers under cloudless skies, wild elderberries
are ripe for the picking, gardens are gushing with
end-of-the-season tomatoes and football tailgate parties
are the place to be on Friday nights.

Time to turn off the computer and lose the cell phone. Be encouraged by the bounty fall brings and hunt for small

Celebrate the month of August!
All over town folks are entertaining on their decks and enjoying
the good life. Zucchini is passed from
neighbor to neighbor and tomatoes are ripe
for the pickin'. The following recipe is a good vintage one with all the calories!
Vintage Zucchini Bread
Mom's 1960 Recipe |

Heat oven 325 degrees
Spray and flour bread pans
Makes 2 Loaves – freezes well
Mix together the following ingredients:
3 eggs
1 c. vegetable oil
2 c. sugar
2 c. zucchini (peeled or unpeeled, grated with moisture squeezed out)
3 t. vanilla
Sift together the following ingredients: |
3 c. flour
1 t. salt
1 t. soda
1 c. chopped walnuts (optional – but not really) |
3 t. cinnamon
¼ t. baking powder
¾ t. nutmeg |

Pour flour and spices into zucchini mixture a little at a time until mixed. Fold in walnuts. Bake 325 degrees for 1 hour or until inserted toothpick comes out clean.
