Bittersweet
The turkey is in the oven and the air is fragrant with Aunt Emma’s pumpkin pies! Set a pretty table

To Grandmother's house we go!
Pumpkin Praline Layer Cake
Taste of Autumn – Gooseberry Patch
I think this is the type of dessert that’s so delicious, it makes your toes curl up!

| 1 C brown sugar, packed |
1 2/3 C sugar |
| 1/2 C butter |
1 C oil |
| 1/4 C whipping cream |
4 eggs |
| 3/4 C chopped pecans |
2 C canned pumpkin |
| 2 C all-purpose flour |
1 3/4 C whipping cream |
| 2 t. pumpkin pie spice |
1/4 C powdered sugar |
| 1 t. baking soda |
1/4 t. vanilla extract |
| 1 t. salt |
Garnish: pumpkin pie spice |
| 2 t. baking powder |
|
Combine first 3 ingredients in a heavy saucepan
over low heat until brown sugar dissolves; stir occasionally. Divide equally between two
greased 9” round cake pans. Sprinkle evenly with pecans; let mixture cool slightly. Sift
together flour, baking powder, spice, baking soda and salt in a bowl; set aside. Blend sugar,
oil and eggs; alternately add pumpkin and reserved dry ingredients. Spoon batter evenly over
pecan mixture in cake pans.
Place pans on a baking sheet and bake at 350 degrees for 35 to 45 minutes or until centers test
clean. Cool cakes in the pans on a wire rack for 5 minutes; invert and cool completely on wire
rack. Beat whipping cream until soft peaks form; stir in powdered sugar and vanilla. Continue
beating until stiff peaks form. To assemble cake, place one layer on a serving plate,
praline-side up; spread with whipped topping. Add second layer, praline-side up, and top with
remaining whipped cream. Garnish with pumpkin pie spice. Serves 8.
