Spring 2009 Newsletter Spring Fever!
Greetings from The Porch!
Cloaked in drama, spring is finally arriving with a rowdy entourage of hail,
popcorn snow and wild blustery winds. The weatherman claims it will arrive this weekend!
Overhead the chatter of native birds and great skeins of honking geese return to begin the chaos of setting up house and
confirm his prediction. Our town no longer waits for snow drifts to step aside so we can set to gardening, for ice to ease
off the lake, for rumbling snowplows to turn into street sweepers and crocus to poke their heads up. Our wait is over!
It's spring fever.
That is what the name of it is.

Well, we're too busy now to give the weather much pause anyway . . . our glorious new patterns have arrived! We're thinking
"refresh" and spring cleaning with obvious delight as we unpack new curtains,

Meanwhile back at The Country Porch, winter is beginning to melt down and tiny Snowdrops are breaching the snow. It's still cold
but we're going to pretend its spring with this delicious Garlicky Chicken-Mushroom Stew!
In general, mankind, since the improvement of cookery, eats twice as much as nature requires.
- Benjamin Franklin
4 boneless, skinless chicken breasts, cubed
salt and pepper to taste
10-3/4 oz. can cream of mushroom & roasted garlic soup
3/4 c. water |
8-oz. pkg. whole mushrooms
1 c. baby carrots
2 stalks celery, chopped |

Arrange chicken in a slow cooker; add salt and pepper to taste. Mix together soup and water; pour over chicken. Add mushrooms, carrots and celery; stir gently.
Cover and cook on low setting for 6 to 8 hours, or until chicken juices run clear when pierced. Serves 4.
